Secret Stash 003: Rafael Amaya CM
Our third Secret Stash coffee for 2021. Every 2 weeks, we'll be dropping a new Secret Stash coffee for you to brew at home.
A coffee that's processed using Carbonic Maceration. Carbonic Maceration is an idea borrowed from the wine world. Whole coffee cherries are sealed in airtight bags, where CO2 is introduced to promote fermentation of particular strains of yeast which contribute to flavour. They are kept at 23 degrees Celcius for an extended period of time until the coffee has reached its optimal fermentation. If you haven't tried a CM-processed coffee before, then this is the one!
FLAVOR NOTES: With this coffee, we taste Tangerine, Rose, Pineapple & Milk Chocolate. It is best brewed using a Pour Over or the Varia Brewer.
