Secret Stash 029: Marcela Castellanos
Our 5th Secret Stash coffee for 2022.
This delicious coffee was grown by Marcela Castellanos and meticulously processed at Finca Cristales. Only the ripest cherries were carefully hand-picked and exposed to a dry anaerobic fermentation of 65 hours before being pulped inside GrainPro bags below 20 degrees Celsius. In this environment, bacteria feeds from carbohydrates and sugars from the mucilage. This leads to a higher concentration of lactic acid.
FLAVOR NOTES: With this coffee, we taste Mango, Apricot, Honey & Pomelo. It is best brewed using Pour Over or Aeropress.
